Q: I need a 32 ft piece?

You can buy 2 strips of 16.4FT LED Strips and connect them in series.

Q: When using these pixels with my controller, do i tell my controller there are 100 pixels or 300 pixels?

Each 3 leds is one pixel they are controlled by the little black ic count the ics and that's how many pixels you have

Q: Do you make a strip that has 1 led per pixel?

Well , you may want the led strip WS2812B , WS2813 or WS2815 all these led strip in individually addressable .

Q: Does it matter how many amps I run to them? Trying to throw them in some headlights & wanna use a 12v 40 amp relay

Yes ,it can . DC12V 40A is OK . Make sure it is DC12V , the current can be 20A 30A 40A 50A etc
