Hi Ajay! Co-incidentally, I had tried it to make sourdough starter with this flour. Somehow, it didn't pick up as much as was needed, and seemed to lack pizzazz. I dont know if there were some other causes, but to me it seemed that the flour lacked a vigorous strain of wild yeast. Perhaps the grain was washed prior to grinding.....I dont know. Anyway, I later used Kefir milk to get things going and I was able to get some good sourdough bread. The recipes are available on the net.
