- It is mainly made from Sangiovese grapes, to which are added small quantities of Cabernet Sauvignon, Merlot and Syrah. Following the manual harvest of the grapes, which took place between the end of September and the first days of October, the grapes are subjected to a soft pressing and the must is transferred to steel tanks where fermentation takes place, with maceration on the skins of 8- 12 days.
