I grew up in New York and as second-generation Italians we did all of our shopping in Corona, Queens or Little Italy. Since moving to Ohio it has been almost impossible to find a really good Italian cheese. When you do find it, you have to mortgage your house to buy it. I decided to give this a try and was not disappointed! It's a little bit softer than the pecorino Romano that we got from Phil's Lattecceria years ago but the taste is every bit as good. Sharp and creamy and the price can't be beaten.

This is a 2 pound chunk remaining from the 6 pound Package. It came in three pieces; two of @ 3 pounds each and a small piece with about 5 ounces extra. Hard as a rock, salty and very tasty, it keeps well in the fridge for 2 months, no trouble. Diced into soups it takes on a rubbery texture that releases the salt flavor when you bite into it. Very slow melting, but a great addition to a cheese crisp when sliced on top of cheddar.

I've been buying this Pecorino Romano for years and it is my favorite italian cheese. I even put it on popcorn! The cheese is delivered with an ice pack, styrofoam container and vacuum packed. I cut the cheese into smaller pieces and vacuum pack the pieces before putting them in the freezer. I like this brand of Romano because it has a full flavor and doesn't appear to be as salty. I even eat it just all by its self.
