Q: I saw on package this is fermented cacao, but is 'fermented' or 'raw' better? which is better for health? Thanks

My understanding is that “raw” cocoa on the market is not raw. Cocoa must go through a heating process. Fermentation is a method used to remove the astringent, bitter taste that is inherent in raw cocoa beans. It is also my understanding that fermentation aids in enhancing the chocolate flavor. Though a necessary process, the hope would be that the fermentation process is monitored under controlled conditions. There is also a lack of consensus as to what constitutes “raw”. A number of suppliers may claim that there bean is “verified “ raw. But is it certified? Big difference!
