Makes nice bread!
This flour has made the most wonderful bread! It has a great recipe on the back that is very quick and easy! I’ve made bread multiple times with it. The flour is soft and smells so good! I particularly like having the value pack so I don’t run out quickly!

My cottagecore dreams are stressing me out
I impulsively bought this 4-pack because I decided at 2 AM that I was going to become a person who bakes their own bread. The flour is amazing, honestly. My first loaf actually looked like food instead of a brick, which is a miracle. It really does make a huge difference compared to the cheap stuff I usually buy. But I severely underestimated how much 12 pounds of flour is. It is taking up my entire shelf and staring at me judgementally. Also, when I opened the first bag, it exploded a cloud of dust into my face and for a second I looked like a Victorian ghost haunting my own kitchen. 4 stars because the flour is great but now I have to bake until I die just to get rid of it.

The best flour
After years of experimenting with various supermarket brands and specialty flours, Bob's Red Mill Artisan Bread Flour has officially become the permanent resident in my pantry. If you are serious about achieving that bakery-quality "shatter" on your crust and a chewy, open crumb, the difference in quality here is night and day. Why It Stands Above the Rest: • Superior Protein Content: While many national brands hover around 11–12% protein, Bob’s sits at a robust 12.5% to 13.5%. This extra boost in gluten development is exactly what you need for high-hydration sourdough or airy baguettes that actually hold their shape instead of flattening out. • Malted for a Better Rise: Unlike some "basic" bread flours (like Gold Medal or store brands), this is blended with a touch of malted barley flour. This small detail provides food for the yeast, leading to a more vigorous rise and a beautiful, golden-brown caramelization on the crust. • Consistency is Key: I’ve found that with budget flours, the moisture absorption can vary bag to bag. Bob’s is remarkably consistent. Whether I’m making a 75% hydration ciabatta or a 100% hydration focaccia, the dough feels "stronger" and easier to handle than when I use King Arthur or generic options.

Tastes Delicious in Sourdough Discard Bread
I use this mainly for making sourdough discard bread (don't have time for full sourdough). This flour makes a very tasty bread, the difference between this and your grocery store bread flour is remarkable. Well worth the little extra cost if you want to enjoy every crumb of your bread.
