Fabulous sharp cheddar.
I like my cheddar cheese sharp and Cabbot does a wonderful job creating this cheese. The texture is wonderful, I think it is a good quality cheese with a great taste. I regularly use it to make a toasted cheese sandwich and it melts wonderfully. By heating the cheese, it brings out an incredible flavor.

Seriously sharp? Not to a Wisconsite who enjoys 5, 7, 10, even 20+ year old cheddar but as "grocery store cheese" goes this is very nice. It certainly offers a sharp taste plus the moisture content is good as well. Well done Cabot of Vermont. Mild, medium, sharp, and extra sharp imply aging from a couple weeks to a handful of months but that's just the beginning of flavor development. You'll need to visit a cheese store for the seriously serious sharp cheeses and the price climbs due to the years of storage in climate controlled warehouses or caves. Cheesemakers generally are taking a gamble beyond 7 years because as the moisture reduces the cheese may crumble and can't be sliced or spoilage can happen.

Good Cheese
Im a die hard tillamook girl. Its the only cheese I used to buy... but lately it seems like they dont taste the same. This brand tastes the way tillamook used to taste in my opinion. I love it and its reasonably priced. Can't wait to buy more.
