Caviar purists will tell you that caviar is made of salted, preserved sturgeon roe and from sturgeon roe only. And that may be true, but that doesn't mean that other similar products cannot be enjoyed too. In fact, having tasted both lumpfish and sturgeon, and also other species' "caviar", lumpfish is still my favorite. So, have a taste, grab some salty crackers and spread cream cheese on them, then put a little of this caviar and be happy. Or, if you know your roes, you may want to go and spend $200 for an ounce of sturgeon "authentic" caviar. It really is up to your tastes. But if you want to serve this as a fancy bite for your snob friends who have caviar for breakfast, it may not do the trick. Lumpfish caviar is not a substitute for the expensive stuff; it's a different food that is great by its own right.
