It’s exactly like the traditional Jello cook ‘n serve pudding without the sugar. I prefer the vanilla but haven’t been able to find it anywhere. Who doesn’t love chocolate though! Even the grandkids love it!

We have a family member who's diabetic and I like to surprise him with desserts that not only he can enjoy but that everyone can share with him. Thanks to jello making the sugar free chocolate & vanilla puddings I made a dessert that floored everybody! I made the chocolate pudding flavor with only one and a half cups lactose-free milk and put this in a sugar-free graham cracker crust and put it aside in the refrigerator. Then I took an 8 oz package of cream cheese and whipped it till it was fluffy. I then made a package of jellos sugar-free vanilla with just one cup of lactose -free milk (to start) and folded into the cream cheese. I then whipped it together until it was smooth, adding a bit of milk as needed to get the right consistency. I I then put this on top of the chocolate pudding in dollops and smoothed it over. I put it in the refrigerator to set for about an hour. I took a carton of Cool whip (which is very lo-cal) and whipped it with a hand mixer until it was very smooth and fluffy then I layered this on top of my chocolate cheesecake. I popped this into the refrigerator until after dinner. My guests could not tell it was sugar free! My diabetic family member kept checking his dexcom to see if it was tripping and it was staying in the safe range the entire time! This is a big credit to jello for making a quality product that tastes great and has no aftertaste! [Hint: You can also freeze this cheesecake and serve it as a Frozen treat! It keeps about 3 - 6 months in the freezer depending on how you wrap it and get the air out.]
