This makes the best Mexican rice! To make a small batch, here is my recipe: one cup of rice, 2 tablespoons mix, 1 tablespoon oil, 2 cups of water. Bring to a boil and simmer for 20 minutes.

I wish this came in packets for smaller number of servings per packet. I used to buy it in packets that made 6 servings and used it often. I googled to get the amount used for only six servings without a problem. I like the flavor of this mix.
