Fantastic.
Read this or don't let me educate y'all a little bit first... There are two kinds of people who are going to buy this. The first person is 28, their metabolism is starting to fail them, they had 2 large pepperoni pizzas for dinner the night before, donuts for breakfast, they had this for lunch trying to offset their horrible eating habits with "healthier options" during some meals. The second person is the same person at 40, 12 years later, and they got their lab results back a year ago... Threatened by diabetes, health issues, and a need, not want, to lose weight, they are now eating low carb/keto/atkins such that they don't die an early death. If you are the first person either save your money and wait 12 years to become the second person, or decide to make the real changes now. If you have kicked sugar and have been eating healthy for a while... These things are it. They are fantastic. I had the other big brand of low carb protein ramen they advertise on Instagram, it was terrible it tasted like wood and sadness. Having kicked the sugar addiction 6 months ago my taste buds have changed and things tastes differently, the bar is lower essentially. To my sugar free taste buds, these noodles were awesome. I was 100 percent expecting them to be terrible, the packet looks super tiny and sad. The noodles are thin, they don't come with seasoning packets for broth, the cook time was 8 minutes... I really wanted a good ramen option to mix in while maintaining my diet... So I gave these things every opportunity to be great that I could... I opened a 5 dollar packet of Japanese ramen I had from the old days and tossed the normal noodles in the trash. So I had real Japanese broth and vegetable packets, I used hot oil from the pantry, fresh cut green onions, and I cracked an egg into the broth when there was about 3 minutes left in the cook. Prepared to be disappointed I took the first bite... Absolute perfection. The noodles cooked up in size, that sad little pack filled a full size ramen bowl, not a soup bowl, a big ramen bowl the size of a dinner plate. They were soft and flavorful, tasted like normal ramen, not like wood fiber, or the nasty almond flour nutty taste that some low carb stuff has. Just great. Were they expensive, yeah, stupid expensive, and it's on you to figure out how to supply seasoning, broth, vegetables, oil, etc... These are it though... It's what you need to keep your diet successful and get your ramen fix properly satisfied. It costs more to eat well, and it typically doesn't taste as good as stuff made 70 percent out of carbs. You'll figure it out if you haven't already... Once you accept that, you just gotta find the best replacement options and live with them, these are now on my "best alternative list". I will 100 percent buy these again.

I found it yall... this is it right here!! As an avid ramen enthusiast, I have always loved ramen, but enhanced ramen. The different ways to create it. With that said, due to a gastric sleeve surgery, I have to now limit carbs and I thought my ramen days were over. I used the "i" brand of low carb ramen that is 40 bucks for six packs but then I saw this. Hands down the best substitute ramen you can get on the market. The texture is awesome, the ability to absorb flavors is outstanding, and the nutritional value is amazing. Quick tip, to get a more straighter ramen, I boil for about 11-12 minutes. For more textured curly ramen, I boil for about 7 minutes. That sweet spot for that in between is about 9-10 minutes. Thank me later. **********************UPDATE***************** I might as well switch to my other brand because they have upped the price since this review from 14bucks to almost 20. Not cool. Luckily I found another brand for 12 bucks that is with the same ingredients!

Tasty Noodles
I have type 2 diabetes, and trying to find a decent noodle that does not spike my blood sugar has been a challenge. I was thrilled with these noodles in a Lo Mein dish. They tasted like real noodles and did not spike my blood sugar. Yes, they are not cheap. However, it is well worth the price to me. Very happy with this product.

Best substitute so far for regular ramen
Great substitute for regular high-sodium and high-carb ramen. Texture, taste and stability of the noodles are all very good. I’ve only cooked one packet so far - used it in soup - and was happy with the result. Bonus points for protein!

Not my favorite
Hmmmmm, this is a hard product to review, in all fairness I think it is a me problem and not the noodle's fault. I bought these as a noodle substitute due to trying to sustain a lower carb lifestyle. I had really high hopes. but I was a little grossed out. When you cook these they produce a thick gel like substance, and to be honest, I couldn't get past that. I tried rinsing them off and got even more grossed out because it got on my hands .By the time I had gotten enough of the jelly like substance off to eat them, I was just too grossed out. I did eat two bites and the flavor was tolerable, but I couldn't get past the my first impression. If you have a stronger stomach than I do then these may work for you, but for me they are a no go. One last thing to add, the packages are very small so if you are expecting something the size of a pack of ramen noodles, you will be disappointed.

Follow instructions and they have great flavor and texture. Nearly identical to regular ramen!
I was really apprehensive about these. So many times the low carb items are so disappointing in texture and flavor. I'm happy to say that these are an exception! I followed the instructions exactly. It does take an extra step or two. But it was completely worth it! The flavor and texture was nearly identical to regular ramen noodles in my ramen soup! These are a bit pricier, of course, than regular ramen but for the low carb, low sodium aspect, I'll keep buying them. I'm going to try them stir fried and some other cooking methods as well but I can tell you that for ramen soup, which is how I eat them 95% of the time, these were a definite win! The serving size was perfect for a nice bowl of soup. They only take about 8 minutes to cook. Then you strain them and rinse them in cold water. You put them in your ramen soup at the same time that you would normally put in the dried noodles. It is a separate step but it wasn't much of an inconvenience. I use dehydrated vegetables that take a little time to rehydrate anyway so I just prepared these noodles while my veggies were rehydrating in my ramen pot. They were not mushy at all and soaked up the flavor of the developed broth really nicely. These are a win!
