What height for 50mm?

It somewhat depends on your rifle and picatinny base. That said, I have 7 sets of these installed on various rifles and can get away with the lowest version (0.85") for all my 50 mm scopes and even some 56mm with still 1/8-1/4" to spare. If in doubt, get the 1.0" as it's just over a 1/8" higher.

What are the torque specs for the scope rings?

I'm using 13 in-lb for the top ring and 16 for the base. Never had one slip as there is ALLOT of clamping surface in these rings.

What height for 56mm?

High or extra high mounts on solid rail like AR-15. You may get away with medium on a rifle with a contour barrel . but it depends on the way the way the receiver and barrel design is on the rifle as well the rail or scope base design that you chose to use with it .
