It's clumped together in some areas and more loosely scattered in others.The bag is a flexible plastic foil-lined pouch.The powder does not appear uniformly distributed—you see some settling and clumping.SCRAMBLED EGGS==============★★★☆☆I was able to make pale yellow scrambled eggs and serve on toast.The eggs were somewhat dry-looking, not overly wet or oily, and appeared to be cooked until set but not browned.The texture was slightly fluffy or crumbly, rather than creamy.OMELETTES=========★★★★★The omelette I made was pale yellow, showing some slight browning on the edges. It was folded in half and had a slightly irregular, rustic shape. Tiny black specks were visible throughout, due to the pepper that I had added. The texture was soft and slightly puffy.

Description clearly says it's guaranteed to have a shelf life of 12+ months. Mine has 4 months. Not as described, as I wanted this to keep for longer term emergencies. Returned.

I never knew about dried/powdered whole egg, only egg white and have to say I’m pleasantly surprised by this stuff. Really simple to use with a pre-measured scoop, just follow the suggested guide to reconstitute the egg powder and it really works and tastes just like egg although if having scrambled egg or omelette, ensure that the egg mix is seasoned to taste as this does help. This stuff is ideal for making mixed egg items where using and storing fresh eggs may not be convenient and also use for baking and making pancakes or waffle batter.Long shelf life of around 18 months, comes in a handy resealable bag which keeps the contents good as long as the bag is stored in a cool dry place, alternatively transfer the contents to a good quality airtight container.£22.99 (at the time of review) this pack is stated as the equivalent of 80 large fresh eggs which I don’t dispute at all but when the cost is broken down by equivalent egg, it actually turns out that this egg powder is more expensive than fresh eggs. I do like that this stuff is ready to use without refrigeration or expiration date worry, a really handy and convenient solution to always having egg available.
