An exceptional knife.
An exceptional knife. Due to the folded steel construction it does not ring like a high carbon steel blade, when tapped. Due to the encapsulated VG10 super steel centre it does go remarkably sharp though and it holds its edge better than any knife I have owned to date. The key to the sharpness is the honing angle its construction allows. I've not sliced through hot butter with it, but that's how it feels. It is not a chef's knife as such, being much lighter, but I find it useful for just about anything anyway. It would serve as a very fine tool for someone less able to wield a larger heavier blade. The quality and finish are top class and along with the performance help to justify the price. I was a bit hesitant spending what this product demanded but once I had received it and started to use it, I was in no doubt I had spent my money well. I once owned a ceramic blade and whilst it was very effective it proved to be very brittle and I chipped the edge. Further to that, it was nigh on impossible to recondition due to the extremely hard nature of the blade. Professional care was probably in order. These VG10 blades offer near ceramic qualities but without the drawbacks and can be managed at home with good stones and a little bit of training. A knife of this quality stands by it performance and this can only be maintained by proper care and attention. Any knife can be rendered ineffective over time so my recommendation would be to invest in a top quality water stone to complete your investment. I use the BearMoo 400/1000 water stone as a minimum and this produces excellent results prior to finer honing or polishing. My experience of the Dalstrong company has been nothing less than very welcoming and friendly with a very strong emphasis on product quality and customer satisfaction. Along with the knife, I recommend both of them most highly.

Ideal for everyday chef knifes
I have first encountered your dalstrong knifes a phew weeks ago when my head chef bought one, it was sharp, comfortable, and very maintainable. With me being an up coming chef I decided to purchase the DALSTRONG VG10 Shogun Series Petty Utility Knife, 6-Inch. And it hasn't disappointed , it is not only a sharp, comfortable knife but a very trendy knife to own, it has a very good and adaptable grip for hands of most sizes, and the edge of the knife is very sharp and after only a couple of days use easy maintained up to know, the blade seems to be made of a good standard of steel. This will be good for everyday use as a chef as it means the blade won't bend and loose it's edge. Overall it's a brilliant product and I will be purchasing more in the next week.

Just amazing kitchen instrument - redefines ‘sharp’.
This is my 3rd Dalstrong Shogun Damascus blade, and I can only give these exquisitely crafted chefs knives a complete and wholehearted recommendation. Super sharp - like, dangerously super sharp blades, with superb balance and weight. The smaller blade for controlled food preparation, slicing and chopping. The 8 inch (Phantom series) chefs knife for high volume food prep, and the amazing 8.5” Kirutsuke knife for broad utility across all edibles, which slices through pretty much everything you can imagine eating. These 3 knives have transformed my cooking, the quality and speed of preparation, and the cleanness and precision of plating. Terrific, discounted value for money too. Hugely recommended.

Excellent knife
The knife was very blunt out of the box. While cutting potatoes was difficult, cutting tomatoes was a night mare. Based upon the all the positive reviews, I had high hope for this knife, but it failed miserably. While the packaging was great, the knife failed in what it was actually supposed to do, and was far away from being sharp. I am returning this product. —————- 6/6/18 : Update. I am fairly impressed by the way the team handled my disappointment sending me another knife, of the same make, as soon as they came to know about my expereince with the purchase. The first one I got was probably a defective piece, but this one is pretty sharp. With the amazing packaging, Product design and built, and excellent customer service I am revising to 5 stars.

Quality knife but not as sharp out of the box
This is my 2nd Dalstrong Shogun knife to compliment my Gyuto. What stops this from getting 5 stars is its sharpness from the factory. My definition of sharpness is being able to push cut through paper. Out of the box I couldn't . Slicing was fine (tip to heel) A few passes on a leather strop and I was able to push cut from the tip to middle portion of the blade but not from the heel of the knife. My gyoto passed the whole test (tip to heel) after stropping and its a large knife. The knife is still scary sharp and will easily slice through fresh tomatoes with little effort or bruising. The knife if fine for my use but I will in the future resharpen + strop with whetstones + leather to get the whole knife scarily sharp. Don't let my fussiness put you off. The quality of finish, edge retention, presentation and value for money easily outweigh my criticism and if you decide to buy one I'm sure it'll be an upgrade to your knife collection.

Simply the best knife.
This Knife is exceptional in its craftsmanship its balance and cutting edge is second to none that I have used over many years of being well versed in the use of all types of knives in all their many uses. Being the Chef and Cheif bottle washer in my home. I love the clean cutting edge making preparing food a real pleasure. 10 out of 10 for the maker of this fine knife.

Exceptional knife
It really doesn't pay to buy cheap easily blunted knives that have to be sharpened over and over again. Did a bit of research and bought this one and don't regret it. Beautiful looking knife, VERY sharp and a pleasure to use with nice weight and balance. The packaging and presentation is also first class. Hoping to build up a collection. Recommended and worth a look.

Poorly sharpened.
Unfortunately this knife was not sufficiently sharp upon delivery. I previously purchased a Dalstrong Shogun 8” Chef Knife which was and is very good! This however does not compare in quality although it is the same brand and the same range.

Habe bereits verschiedene Messer in ca. dieser Größe und muss sagen, bin von dem Dalstrong sehr beeindruckt. War ein Tipp aus irgendeinem YouTube-Kanal und ja, absolut super Preis-Leistungsverhältnis. Das Messer muss sich nicht vor 2-3 mal so teuren verstecken, ich habe den Vergleich. Ok, Schneidhaltigkeit werde ich noch sehen und die Anfangsschärfe ist jetzt nicht auf absolut Top-Niveau, aber das ist egal. Jedes Messer muss geschärft werden. Bester Punkt ist es liegt für mich super in der Hand, wirkt stabil und robust.. Auch eher schwer, verglichen mit hochwertigen Japanischen Messern dieser Größe, mit dickerem Rücken. Aber genau dadurch wirkt es so stabil, das perfekte Fleischmesser würde ich sagen, auch wenn es mal etwas grober zugehen muss. Der Griff ist von der Optik vielleicht das einzige kleine Manko, eher billiger Kunststoff mit merkwürdig facettierter Optik. Aber ist funktional und bestimmt langlebig. Die Damast-Maserung der Klinge ist zwar eher dezent, aber "schön". Ja, insgesamt gefällt mir das alles sehr gut. Besonders erwähnen möchte ich noch die hochwertige und im Detail wirklich schön gemachte Verpackung. Die ist tatsächlich selbst 4-mal so teuren Miyabi-Messern überlegen, hätte ich niemals erwartet. Einziger Punkt wo ich für dieses Messer abraten würde ist wenn man eine filigrane, flexible Klinge sucht. So ist es überhaupt nicht, schwer und robust ist der Eindruck.

This is my second knife from Dalstrong and it won't be the last. I have a huge collection of much pricier knives as I'm a chef in a pretty well known steakhouse for the last 20 years so I'm not easily impressed. The 2 Dalstrong knives I just bought impressed the crap out of me right out of the box, and as much as I've used them every day they continue to impress me with how perfectly they hold the edge and how good they feel in my hand. The weight is sturdy and substantial, and it's never felt clumsy or too heavy to do intricate work. I'm pretty OCD about honing and sharpening all my knives once a week, and after using this 6 hours a day for 2 weeks I'm still waiting for the most miniscule sign the blade is starting to get dull. After a lot of years working in a restaurant it takes a lot to impress me, but damn Dalstrong well done!
