I bake soft bread that is difficult to slice without squishing. Does this work with soft bread?

I do not think it would work too well with softer bread. I bake very crusty, European-style bread, and for this it works like a dream. When i bake softer white bread, my bread has to firm up a bit before slicing it with this machine. I would not think it a good buy for soft breads, but others might have had different results.

On my machine the plate which holds the adjustment knob is loose, resulting in thickness changes while slicing. Can I tighten this myself?

After a few weeks of use, the nut holding the thickness knob fell off, allowing the face that holds the bread to move -- practically float -- while slicing. That might be what your problem is. Reattaching the nut requires that you use a tool that can both push against a fairly strong spring and thread a nut onto the bolt at the same time. I used a 5/16" nut driver and a few expletives to accomplish this, though the nut is 8mm since the unit is German. A socket wrench might do as well. Be careful: while focusing on the nut, your other hand will be holding the knob and be quite near the blade. Try not to cut yourself.

The suction cups do not work and that is dangerous - what can I do about it ? Everything is clean and does not hold

The suction cups work very well on a smooth wooden surface. I make sure the cups are clean and slightly moist before attaching to the clean and dry wooden top of my counter island. Then I push down on each corner of the wooden base of the slicer. Once attached it is difficult to pull the unit off of the counter top.

Does this come with a safety cover when not in use?

There is no cover. I use it every day and have not had any safety concerns about it when it is not in use. There is no threat posed. However, when slicing, be sure you are not distracted and observe how close your hand is coming to the blade. A perfectly safe machine.
