If you are thinking about entering this industry, read this book first
To help a couple of clients I did bookkeeping for, I decided to use this book as a primer. Often I find Dummies books to be a great intro primer onto a new subject. However this book outlines this industry in direct terms and puts the issues this industry faces into focus. The author doesn't sugar coat the problems inherent in this industry and is straightforward in how to tackle them. The book offers some very simple straightforward wisdom for dealing with suppliers, customers, cash flow, planning, as well as look and presentation. I have seen these practices at work in successful business, and watch a client flail around for months aimlessly believing he was right. It wasn't until he took the time to actually read it that he began to turn things around. I highly recommend this book to anyone as an eye opener before you begin a business in this industry. I even recommend it for a few great insights into what your doing right now.

Another good Dummies book
There is much in here that is applicable to any potential new business owner. The specific restaurant knowledge in here needs to be complemented with experience in the business, but the authors are not trying to replace experience with this book. It's a great book for helping one decide whether to take the plunge and open their own business.

Dummies for a Dummy
I ordered this book so that I would know what I needed to do to open my own sandwich shop. The book starts off good with chapter one. Reading on the book refers you to another chapter for information. You go to that chapter and it tells you to go to other chapters. The order of the book is a bit out of whack. Reminds me of Joy of Cooking. The recipes tell you to go to another recipe to finish the one you are making. It would be a much better book if it went step 1, 2, and 3 without having you jump all over the place. I figure that this has to do with an editor, not the writer.

Wonderful guide for start-up food establishments
I thought I knew what I was going to need to do to open a cafe until I got a copy of this book. It covers the gamut, is well-written and researched, and will be my bible for my new cafe.

Edition was too old for today's updated restaurants.

Buy this book
I am a greenhorn thinking about investing in a restaurant. I know nothing about the business of Restaurants. The book helped immensely in my decision to keep looking for the restaurant I want to invest in. When I spoke to friends who own resturants, after I read the book, I felt I could carry on a cognizant conversation with them regarding the business. Buy it!!!!!

Very thorough
Very good ideas and a nuts-to-bolts review of how to get a restaurant up and running. I would recommend to anyone just starting out or not very experienced in the restaurant business. Might help experienced people too.
