Love LOve LOVe LOVE...... These Jalapenos.
I use these almost exclusively for making sausage and for sausage making..... these are perfect. The heat level is up there, as jalapenos go, and the flavor is excellent. They have retained their dark green color and hold it in my sausage too. Everyone who has eaten my sausages with these jalapenos has commented on how good the heat and flavor was for the peppers.If you are looking for a jalapeno for sausage making....... buy it. These also cook up really well in scrambled eggs. YUM!

Minced & Dried w/Whole Stems (Not Flakes)
The description for this is not accurate. This is not jalapeño flakes. Instead, this is dried minced jalapeño including large stems. I added two cups to 12 pounds of ground meat, stuffed it into 32-35mm casings, smoked it to 155 degrees for four hours, cooled in an ice bath and final smoked to 155 a second time only to have several bites of sausage that had hard pieces of stems. I do not recommend this product because jalapeño “flakes” would/should not include entire stems of the peppers.
