Excellent Everyday Utility Knife with Reliable Sharpness
I have used the Misen 5.5 inch Utility Knife for several years, and it has remained one of my most reliable kitchen tools. The size is perfect for daily prep work since it sits comfortably between a small paring knife and a full chef’s knife. I reach for it more than any other knife because it is small enough for precise control and still large enough to handle most cutting tasks. The blade arrived very sharp and has stayed sharp over time. It cuts smoothly through all types of vegetables and meats with very little effort. Even after years of use, the edge retention has held up better than I expected for the price. I have purchased several as gifts for friends and family who are getting into cooking because it offers great value and is very easy to work with. The handle is comfortable, secure, and allows for longer prep sessions without fatigue. I always hand wash the knife and it has stayed in excellent condition with no issues. The overall build quality still feels solid and dependable. Verdict: A great value, a great size, and a very reliable everyday knife. Perfect for new cooks and for anyone who wants a versatile blade that stays sharp and performs well for years.

My EDC of kitchen knives
6 month review One of my passions is cooking, I have owned and managed several restaurants over the last 20 years never did I think I could or would use a knife in this price range. With that being said one of my employees mentioned they used Misen knives at home and was surprised by the quality. I went to their website and scoured the web for real reviews (if I could find a knife at this price point that actually was as good as the reviews I was willing to put in the time to research). I ultimately ended up buying the entire set on Amazon due to the easy return policy and of course the 2% back). Here's my impressions from day one to almost 7 months. Day 1 arrival and unboxing - All the knives arrived in premium packaging. I washed and sanitized them all preparing to use them for dinner. The knives themselves wereuch lighter than I expected and felt perfect in the hand. The material the handles are made of felt perfect . I would compare it to a ceramic with a matte textured finish. Blades were shard as they should be and ready to quarter some Cornish hens. All of the blades cut just as well as my much more expensive set. Vegetables diced perfectly. One of my favorite features about these knives it the angle at which the blades are forged. For instance the chef knife angle is different than the paring knife angle allowing each knife to perform individually perfect at the task it's supposed to do. One month in and all the blades are still Sharp. Edges are clean and no honing or sharpening needed. Although I don't use every knife every day I do use at least one or two of the set daily. 3 months in and knives are still holding an edge and I decided not to sharpen them to see exactly how long I could go before needing to sharpen them. This gives me a good idea of the quality of the steel used to make these knives 6 months in and all of the knives still have an edge but starting to dull. I sharpened the entire set and they were like new. I specifically used an inexpensive wet Stone to sharpen these knives instead of a honing tool so that way I could see if the average user would be able to sharpen easily. 7 months since I first received this set and I'm happy to say it is now on my countertop for use as my daily knife. Since then I have ordered several different Misen products and hope they all are as good as this knife set. I'll continue to update this review . Bottom line is the quality versus value of this set is unbeatable. I purchased two more sets as gifts. You can't go wrong

Super sharp out of the box. Perfect weight for cutting and blade angle works great for chopping.
This knife is perfect. It was extremely sharp out-of-the-box, and the perfect weight for chopping. For some, an 8 inch Chef's knife may feel unwieldy, as it was for me at one time. I used to use a 5 inch Chef's knife, but once I got used to the 8 inch, I wouldn't go back to the 5 inch for most of what I use a Chef's knife for. I use this knife more than once daily for cutting potatoes, tomatoes, and for chopping herbs like parsley. For many knives, cutting tomatoes is a problem as they tend to squish if the blade isn't sharp enough. This knife cuts through them using practically no pressure so they don't squish. You can consistently cut perfect paper thin slices of tomatoes without squishing the tomato using this knife. One of my favorite uses for this knife is to chop herbs, such as parsley. Simply put a couple fingers on the end of the knife, lift the handle so the blade is over the herbs, and let the weight of the knife do the work. Chopping onions, garlic, parsley and more takes a matter of a couple of minutes. Although I have a couple of machines for chopping, I generally don't use them since I can chop more quickly with this knife and not have to clean the container for the chopping machines. Using this knife takes less time with much less cleanup. Since this knife has the Asian blade of 15 degrees, I expect the blade will need to be sharpened more often than the Euro blade of 20 degrees. Since the blade is made from a high carbon AUS10 steel, it should hold the sharpness for longer than blades of a lesser steel. Comparing this knife to some of the high end knives I have, such as Shun, Wustoff, etc., this knife is every bit as good at a much more reasonable price. I do recommend this knife, and hope this review was helpful for you. I will definitely update this review if my opinion changes.

Goldilocks knife
I feel emotionally attached to this knife. I had a previous kitchen knife that I used for everything, so much and for so long that the knife popped out of the handle. I bought other knives but the angle wasn't right or they were too long for regular use or too short. I ended up putting my old knife back together with epoxy glue. When it finally split again, I knew I needed a new knife. My husband gifted this to me and it's the knife I've been missing. Better even than my old one. My Goldlilocks knife, finally. It's sharp. Cuts a tomato like butter (or at least I feel like it does). The weight, balance, and angle are perfect. The handle is comfortable and allows me to cut a variety of things easily. I'm so happy! I had always heard of Misen, but thought they must be ultra pricey for the praise I'd read. For this price, it's worth every penny.

Great sharp knife
Great knife, blade is thin, light weight and very SHARP. It is very easy to use and cuts everything like butter. I'm giving it a 4 stars because I did notice that one side of the blade started to show some rainbow discolor like how your stainless steel pan discolors. Not a big deal, but I haven't seen that in my other knives. It's been about a month of use and I use it almost everyday.

5.5in = Perfect All-Rounder
The Little Engine That Could. Punches well above its weight and size, yet small enough for detailed work and peeling. If I had to choose only 1 knife to do it all, this would be it. The balance just “feels right” - the blade is deft & the knife does a lot of the work for you without being blade-heavy. Meanwhile the shape is both classical & modern; this blade just makes sense in the hand. For me this one really is the sweet spot. Great, thoughtful design job by the Misen team.

lovely knife
i was waiting to review this knife until i had used it a fair amount. it came very sharp, and i will hopefully be able to keep it that way. this is technically a utility knife but as i have small hands, i mostly use it as a small chef knife. i have a larger one that i will use for big tasks like the once a year i have to break down a squash for thanksgiving, but for standard chopping and slicing, using a smaller, lighter knife is just less fatiguing. this is a lovely looking knife, the blue color is very nice (although i kind of wish the green that Misen has for some items had been available). the balance is also quite good, and blade has stayed quite sharp. next goal? getting my housemate to start using this, and stop using the knives they’ve had for 40 years and never, ever sharpened.

Great Entry Level Chef’s Knife
The Misen chef’s knife is my first piece of their cutlery and it has made a great first impression. Out of the box, the assembly is spot-on with no discernable gaps and an all-around great finish on both blade and handle (I purchased the blue handle). My knife came to me impressively sharp; sharp enough to easily pass the paper test and glided right through a tomato. The first recipe I used it for called for a chopped onion which it made very short work of and without causing any tears – a good indicator of its sharpness. It also cut raw chicken breast easily for the same recipe. The hybrid blade geometry is nice to work with but it could take some getting used to if you’ve been using another brand for the past few years or decades. The steel used (AUS-10) carries a Rockwell hardness rating of 58/60 HRC. Certainly not diamond-hard, but definitely hard enough to hold a nice edge when sharpened properly. In principle, a knife is simple – a blade with a handle. I know that far pricier options exist but I’m not in the mood to dump hundreds of dollars into a knife when this option will perform comparably well for a fraction of the price. I don’t need to have the top-end name in my knife block since I’m not trying to impress with the label on my cutlery. For a home chef like me, this tool does the job and I expect many years of good service out of it in the future. An economy car can get you from A to B just the same as a luxury car can. If you just have to have that luxury name in your kitchen, keep looking. This knife is the Honda Civic – simple, unassuming, reliable, and well-made. It won’t get you noticed by any label snobs though. Bottom line – I like this knife and I would definitely recommend it at this price point. You get your money’s worth.
