How do these change colour? Is there a remote? Can the remote be used to turn them on and off?

The same at each voltage. Depends on the size and number of LEDs in each model. I cannot recommend the lights however as all those I have fitted have failed within a few weeks. Usually the lens cracks perhaps due to heat an water gets in.
