How to air fry salmon fillets: • Set your air fryer at 200°c for 5 minutes • Rub each salmon fillet with a little olive oil and season to your taste with salt, pepper and any other spices. • For crispy salmon skin, place the salmon skin side up in the frying basket and brush the skin of the salmon with a little olive oil. • Line the base of the basket with a sheet of tin foil and place the grill plate on top of the foil (this will make it easier to clean at the end) • Place your salmon in the air fryer basket in one layer and cook for 8 minutes, or until cooked through. Don’t overload the frying basket and make sure you distribute all the ingredients evenly • As with all cooking methods, the exact cooking time will depend on the thickness of your salmon fillets – if they are larger, you’ll need to keep checking regularly after 8 minutes until it flakes easily when pressed with a fork • Plate, serve and enjoy

We do produce sushi grade salmon for eating raw in restaurants, but it is very specialised and requires additional controls on the production process, lower storage temperature and shelf life to maintain it's safety. Our sushi grade salmon is distributed through a low temperature chill chain to end use and stored carefully (dry and cold) by the end user. Our salmon fillets sold in packets come from the same sushi grade salmon but are intended for cooking and we are not able to recommend them for consumption raw because we cannot guarantee or are 100% confident that all of the controls required are achieved (particularly once the packs leave our site). So this concern is primarily about temperature control once in the supply chain. Because we look after our salmon from farm to plate we care about everything they experience and this results in reliably healthy, tasty fish. Our salmon is so fresh we never freeze it before it goes into store. It's a difficult situation to advise, especially if catering for vulnerable people.
