Q: Can i use those for a fs-020: ems professional (8 channels/ 16 pads.) ?

No. These pads are self stick gel type. For fs-020 water applied to pads is necessary. Just noticed date of your question. Maybe my late answer will help another.

It does not want to stick for a good while it needs to improve on the stickiness to your skin

Q: Are these electrodes latex free

I'm not sure if it has latex in it but from a visual point of view the contact surface is a very sticky type of Gel that can be re-applied multiple times. I would say call the manufacturer to be safe.
