This is a really quality saucepan which is ideal for singles or couples who mostly want to halve recipes like curries, etc (if you are cooking for a family of several people then the 28cm one would be a better size). It cooks very well and evenly, but a word of warning - because it is a really good heat conductor, you need to turn the temperatures down from what they recommend in most recipe books (in one of my first attempts with this saucepan, I burnt a prawn dish by following the instructions for heat used in the recipe). The base in particular is very heavy (the whole saucepan is quite heavy) and thus takes a minute to heat up, and then when you turn it down it takes a little longer (not much, though) than most saucepans to cool down. It is very very easy to clean. I use a gas stove and I was worried about burning my hands on the handles and bought some neoprene mitts just in case, but I haven't needed to use them. It might be an issue for some of the smaller saucepans, say the 16 or 20cm, but not this one. The only negative I can say is that the rainbow discolouration common to stainless steel happens relatively easily on the inside surface, and quickly, but this is a very minor quibble, does not affect the performance of the piece at all, does not happen at all to the outside which has a matte finish, and happens with almost all quality stainless steel saucepans anyway.

This is a fabulous top quality cooking and roasting pan from Fissler and is unlike anything I have used before. I generally use a cast iron casserole for cooking and roasting, which I love and didn’t think I would find anything that compares, but this Fissler pan compares very favourably indeed! The thick stainless steel base means that the pan sits very firmly on the hob, with no wobbling. It conducts the heat very quickly and evenly, making browning meat a very quick and easy process. The 4.8L size of the pan means that you can batch cook easily in the pan, or for large family/friends gatherings, in my experience you can easily cook for up to twelve if cooking up a bolognese, chilli, curry or stew, using 1.5 kg of meat (or alternative plant based substitute!). The hermetic domed lid fits snuggly and retains the heat and moisture well and also does a good job at keeping cooking aromas to a minimum. In terms of heat conduction through the handles, I would say it does reasonably well when used on the hob, but it did find the handle on the domed lid was a bit too hot to handle when the pan had been on the hob for some time (as you might expect), though the sturdy side handles on the main pain were still manageable. In the oven, the pan roasts wonderfully, but I would say that with the dome it is tall, so in my single oven it did take up most of the oven space with little room for anything else. That’s OK if you roast your potatoes in with your meat, but if not this could be a down side. I also would have preferred the handle on the lid to be slightly smaller and flatter to aid manoeuvring in the oven and storage, as the handle is slightly too proud when you turn the lid upside down for storage in the pan, so I kept the packing ring that came with it so that the lid remains steady and flatter for storage. It’s only a small niggle, but for the money I would have liked those small elements to have been perfect. Also, the internal measuring guides are a nice to have, though don’t think they’ll get much use really in terms of the type of cooking I generally do. In terms of cleaning, it’s great that it goes in the dishwasher, but as it’s so large I washed it by hand, which was very easy as nothing sticks to the pan and it still looks good as new even after multiple uses. So in summary, this is a fabulous pan that’s a serious investment piece that will provide decades of cooking from generation to generation. A couple of minor niggles but they don’t take away from how wonderfully this pan cooks.

After much doubting, I've finally bought this pan and I find it excellent, sturdy, made to last and to be inherited. It is very big, much bigger than I could imagine before. Even there are measurement, the visualization is often another story. The pan is heavy, like a good piece of cooking should be. The distribution of heat is excellent. I tried it at oven with very good results. I also bought a steam insert for it from another house and I plan to use it also for dumpings.
