How many litres of sugared tea can be used with the 400ml of starter liquid provided so that the optimum pH is maintained?

Hey. We recommend max 2.5 litres to be added to the 400 ml. The only reason being that it will take much longer to make your kombucha. Hope this answered your question :)

What to do when the scoby grows as new culture will not be usefull?

As you keep brewing kombucha, new layer of SCOBY keeps growing. If the old SCOBY stays in the brew, the brew gets sour very soon. So you need to remove it. The removed SCOBY is nutrient rich and very good source of collagen. Use it as follows. 1. Make sweet jerky. (Cut into pieces and dehydrate. You can also grind it, dehydrate and cut into small bits. Add flavours and sugar while dehydrating.) (Google for recipes) 2. Grind it and mix with nuts and sugar and syrups and cool in refrigerator for a healthy ice cream alternative. 3. Use for making compost. You can also just add it to soil. *Note: when eating the SCOBY as jerky or ice cream, wash it properly else it will taste sour.
