Q: Is there any aluminum or metal alloy in this pan?

YES, per the item description, this pan is made of Aluminum. I have used mine now for a couple of years and see no signs of the anti stick coating wearing off. Hope this helps. But if you want a pan with no aluminum, this is not the one for you. I have not found this pan in a silicone though.

Q: How to prevent the coating from peeling off?

I haven't had that issue. I think if used as intended and washed with care with soap and warm water it should last a really long time. It is very easy to hand wash

Q: Does the size works well for the Japanese milk bread recipe (620g loaf)?

I have used it for the same kind of bread but have found that I like to make a full recipe and another half. To get a little over a 900g loaf.

Q: What kind of metal is this?

I returned this particular pan. I ended up getting the Gold Aluminium alloy size 8.35x4.8x4.5 inch. I didn't like the way the cover didn't fit taking it on and off.
