Good product
The yeast came in a vacuum sealed brick, expiring in 2022. I have made regular buttered bread loaf and buns 4 times and was successful each time. I don't use warm water, just room temperature purified tap water; proving is not necessary. I put the yeast on one side of flour mixture and dump the water on top of the yeast to make sure it gets wet first before mixing the dough. IMHO Instaferm is better and more reliable than SAF Red and Gold which I have been using the past 15 years. To make the yeast last up to expiration date, I transfer a small portion into an 8 ounce jar kept in the fridge and vacuum seal the rest stored in the freezer.

Great yeast!
Rises fast and makes good breads. Purchased May23, 2020 during pandemic. It lasted until today, May26, 2023. I kept it in small glass jars in the freezer the whole time. It was just as energetic as the day I got it. I purchased another bag today. It seems pricey but honestly it was only $5 more than it was 3 years ago. Not terrible. I tried the SAF as it was half the price but was not impressed with the little to no activity. I'm sticking with Instaferm.

Great yeast, but price gouging.
This seems to be great yeast, I only knocked off a star because the price is so high just for Covid. I used a large spaghetti sauce jar to hold it and it barely fit. I tested it with just warm water (just barely 110 degrees) and it wasn't as bubbly as I normally want it to be (3rd from last pic). So I put it into the oven on proof and it started to activate more (2nd to last pic). I added some flour and put it up in a warm cabinet and in less than 30 minutes it was overflowing! I put it into a bigger bowl (last pic). I was nervous because of the mixed reviews, but I was desperate. It definitely works.

Love it!
I did a lot of yeast bread baking in my younger years, and retirement has allowed me to resume my love of baking. I had only used regular active dry yeast packets previously, but the virus has made it difficult to find any kind of yeast for baking locally! I found this yeast on Amazon and after a bit of research decided to give it a try, and I’m so glad that I did! My first foray back into baking was with bagels and they turned out so yummy! My research found that “Instant yeast requires approximately a 25% reduction from the amount of active dry called for, and this worked for me! I think I would have had a bit too much yeast flavor without the reduction. Although this instant yeast does not call for proofing, I did so anyway: it seemed a little less fizzy than regular active, but worked great regardless! The price for the amount of yeast is great and storing in the fridge or freezer should provide a long shelf life and lots of breads and donuts:)

Still active 2 years later
Like most people I bought this yeast at the beginning of the pandemic. 2 years later I'm using the last of that purchase and came back to get more. Much more economical to buy in bulk than a bunch of small packets. I keep what I am using in a small glass Mason jar and the rest in the freezer. Yesterday's loaves looked just as good as the ones at the beginning of the pandemic (maybe better since my bread making skills have definitely improved) Definitely a good purchase and great yeast product.

Good strong yeast, gives a nice flavor
This is the second pound we purchased. The first one lasted a year of our pandemic-induced baking. We kept it in the refrigerator. Using the last of the old one, and then a few days later the first of the new one, I found that the difference was noticeable -- dough with the new yeast rose faster. So if you are going to use this over a long period as we did, I think that keeping the bulk of it in small jars in the freezer would be better -- then thaw out a new jar when the current one is used up. Old spice jars work well for this purpose.

I used it today for the first time. It works so well that my raisin bread almost opened the lid of my bread machine by itself ! I'll do as suggested, I'll will keep the yeast in the freezer in an air tight container. I'll see if it continues to do a good job over the next weeks/months and I'll come back to report any change.
