Will do in a pinch
If you can't make Huancaina sauce at home, this will do in a pinch. But it's nothing like real homemade. It's a bit sweeter and sometimes reminds me a little of ballpark nacho cheese. It has a very mild kick, and I prefer it a bit spicier. I'll stick to making my own, even if it takes longer.

This is good stuff. If you've ever dreamed about going to Peru and trying the ceviche, the rotisserie chicken, the lomo saltado and the other recipes that make Peru one of the most interesting culinary countries on the planet but don't have the money or the time, then this is something to help suppress that traveling jones. Papas a la huancaina is a dish consisting of sliced potatoes covered with this sauce. The sauce is named after the town where it was invented. It's a standard Peruvian dish, and like all other Peruvian recipes, it's absolutely delish!!!
