I had not made brown mustard before, so the first mustard I made was a light white wine mustard that turned out very nice. I am sure I will try other brown mustard recipes in the future.

And this was not it. I guess I didn't realize one pound would be such a small amount. These come in a small jar, and they are a very tiny mustard seed. The flavor is fine, I actually found a bulk amount and added these to it, so as to incorporate the two different seeds to maintain consistency in my mustard batches I will be making. They are very dark.
