Are the larger sprinkles really hard i bought a different brand and the larger sprinkles are hard as rocks

They are not very hard. After they sit on your icing for a while they are perfect!

Since this product includes metallic dragees that you say are not edible, do I need to pick them out before adding this product to my cookies?

I put these on top of a cake. I thought they were all edible. These are definitely larger sprinkles.

Would these work for ice cream sundae toppings?

Not really because there are hard pieces of sugar in them.
