Q: Has anyone use mineral oil or tung oil to pre-treat these boards? Or left them natural without oil? What results?

I never oil the board and it is fine after years of heavy use.

Q: Is this cutting board one solid piece or glued several pieces ?

I bought the 10.75 inch board, and it is plywood construction (not strips of wood like most cutting boards). It appears to be high-quality, but it is thin, light weight And somewhat delicate. It does seem to be holding up to water (hopefully the glue is food safe; if it was manufactured in Japan, I would trust them more than American construction).

Japan... from Shun’s site. “The wood for Shun’s hinoki products is grown in Japan and is Forest Stewardship Council (FSC) Certified for sustainable forest management practices. In addition, all our hinoki products are made from wood resulting from forest thinning, which is required to maintain healthy growth.” Great cutting board, I have 2.
