Try soaking it in a soapy water for a while, running it though dishwasher (at the highest water temperature), applying extra effective detergent. Either would work. If you think you might get a bigger pan someday go for the 15, but the 13 will work with your 12.5 pan. It doesn't matter if the screen is bigger than the pan.
