Does this watch automatically track exercise activity like Fitbit, or do you have to manually start an activity (e.g. a run) from the watch?

Yes, if you have both "MoveIQ" and "Auto Activity Start" enabled, the watch will detect if you are running or walking for a certain length of time and automatically start an appropriate activity. The setting for walking is configurable for 5, 10, or 15 minutes, and run is configurable for 1, 2, or 3 minutes. IE, if you walk or run for the configured period of time, the device will automatically start an activity for you, and it should include the activity leading up to starting the activity. That said, tracking will still be more accurate if you start the activity yourself, rather than rely on the watch to do it and disabling "MoveIQ" improves battery life.

Does this watch pair with iphone and android phones?

Will this watch control streaming audio sources from iPhone while the phone is also connected to wireless ear buds?

Yes it does and I have iPhone 11 Pro and Bose Bluetooth wireless headphones

Does this have voice prompts? Specifically want to use it for Tabata training. i.e. with app that counts down work/rest intervals.

If it's like some of the other models, you can get voice prompts through bluetooth or the phone. You won't get countdowns but rather end of interval announcements. You can also get a vibrate but depending on what you do it might not be strong enough.
