I absolutely love this mushroom seasoning powder from Lee Kum Kee. It has quickly become one of my kitchen essentials. The flavour is rich, savoury and packed with umami savouriness, adding depth to almost any dish without overpowering the other ingredients. Although it only contains a small percentage of mushroom, the mushroom aroma and taste come through beautifully. It has a soft, fine texture and dissolves easily into liquids, much like a stock cube, without thickening the dish.The seasoning is super salty though, so I always make sure to adjust the rest of the recipe accordingly. At first, I didn't realise how salty it would be and made the mistake of directly adding a spoonful - I soon realised!! A little definitely goes a long way and I usually use it in place of salt now, much earlier on in the cooking process, then finish seasoning at the end, but I really don't think you need to add additional salt. The suggested ratio of one teaspoon to around 300 to 350ml of water works well for soups and stocks, but I now often also just add a pinch directly into sauces, risottos, stir fries, casseroles and stews. I’ve even used it in bolognese and cottage pie to boost the flavour. It works brilliantly as a base for ramen broth as well and is particularly good in risotto, giving it a delicious richness.What I really appreciate is its versatility. Despite its strong umami kick, it doesn’t drastically alter the dish or give it a strong mushroom taste. It just enhances the overall savoury profile. The tin is huge and excellent value for money, especially considering how little you need for each use. It comes in an airtight container with a resealable lid (you have to peel back the can first), and the quality is just what I expect from Lee Kum Kee (I already use their soy sauce). The ingredients are clearly listed, and although there’s more salt than mushroom, the balance works perfectly. I trust this brand completely and use many of their other products, so I had no hesitation trying this one and I’m really glad I did.

I was genuinely surprised by how much depth this mushroom seasoning adds to my cooking. It's rich, savory, and gives a perfect umami punch that elevates anything you add it to. I've added it to soups, peppercorn sauce, Bolognese, lamb shoulder rub, noodles... Just a small sprinkle goes a long way, and it dissolves beautifully without any gritty texture. You can tell it’s made from good-quality mushrooms. There's no weird aftertaste, just a clean, earthy, umami flavour. Just be aware that it's sweet and salty so keep it in mind when seasoning with other things such as salt or stock. The quantity is another pro. This seasoning will last you a while.
