Thickens very well
My friend and I made apple pie filling with the recipe grill Ball jars. We had extra apples so we adjusted the ingredients but I think we could’ve left the gel amount the same because it thickened before we could add the apples. The writeup said it doesn’t thicken until after it cools but this thickened up very quickly while cooking on the stove top. It turned out fine and the gel is clear and very tasty, not tasting like flour or cornstarch.I’m wondering if the ball recipe was a little off base because it sounds like the ratio of gel powder to liquid was too much. The Apple filling made delicious tarts with puff pastry. So double check your recipe against the powder to liquid ratio against the instructions on the package.

A little goes a long way
I used at what recipe called for and found this product works to good. Start with test batch and work up due to different pectin values in your fruit. Wonderful for syrup, jams & jellies and pie of course.

Use a tad less then the recipes call for when using this for canning, otherwise works great
