Love it! First I wanted to buy a cheaper piece of linen from a fabric store. But the chemicals that are surely used in its production don't strike me as food safe, so I budged and got the real thing. I do not think that the initial smell others mentioned is strong. It is stiff at first, but that will change with proper use. I did a lean loaf with seeds, nothing stuck and the result was perfect. Way more substantial feel than cotton towels. I would recommend it.

My old one probably had enough flour in it to make a loaf, never wash it. I roll mine and keep in the freezer between uses. There are just some things the French are really good at.

I would give this couche a five star rating if there weren't so many lints coming off the fabric while proofing the dough. It did helped the dough rise & stayed in its form but the dough caught on little lints where I can only removed the larger strands & had to bake in the small fibers absorbed into the dough. I followed the instruction not to wash it before use so hoping all the tiny particles will eventually get removed by progressive use.

Finally successful with my baguettes!
