- OAK IS STRONGLY ANTIBACTERIAL & TESTS SHOW HIGHER ANTIOXIDANT & PHENOLS LEVELS THAN OTHER HONEYS. Oak honey often tests at the same antibacterial level - or higher - than Manuka. Lab tests at Thesseloniki University also found it was higher than any other honey in antioxidants & phenols.
- 100% RAW, COLD PRESSED, UNPASTEURISED No heat used and only put through a coarse filter to take out bits of hive debris - leaving all the good bits in. Pollen, propolis fragments, bits of bees wax and often royal jelly.
- CERTIFIED ORGANIC BY THE EU & SOIL ASSOCIATION. This honey is produced to standards which are monitored via unannounced visits from the certifier. - RAW HONEY NATURALLY CRYSTALLISES OVER TIME. If yours has crystalised and you prefer it runny, place it on a radiator and drape a tea towel over it. Leave it overnight. The heat will not damage the honey, the important thing is that you don't heat the honey beyond 40 degrees (the hive can get this hot in Summer). If the radiators are very hot then a thin book under the jars to shield them from direct heat. It can take up to two days to fully liquify.

**Q: can I use this honey for fermentation of garlic?**
A: Hello Mary,  Thankyou for your question. All our honey is raw and natural so any one of our jars will be great to use in this process. The only thing to note is that the dark honeys are thicker and less sweet as opposed to the lighter sweeter and more fragrant honey's like the blossom and herbal honeys. Hope that helps! A magnificent honey with a wonderful aroma. Full of flavour, with a savoury complexity that I love. EDIT: The jar described above was quite possibly the best honey I've tasted but the next jar I bought of this was quite unremarkable and not worth the money. It may have partially crystallized as it is much thicker and lighter in colour, and tastes and smells completely different, although doesnt have obvious crystals in. I tried warming it in a water bath and above a radiator for a few days but it is still nothing like the gorgeous flavour, aroma and texture of the last one. Not sure if it was mislabelled or just a highly variable honey, but it makes me wary of buying another one, unfortunately.
