Glass, plastic, and wood. Generally speaking if you want to keep your knife's edge you should be using wood or one of the plastics. I prefer wood for my larger cutting boards, and bamboo specifically. This cutting board is a great size, has the nice feature of the grooves around the edge to collect juices from whatever you are cutting. With the small reservoir there is ample room to manage even very juicy cuts of meat, or poultry, as well as fruits. The board is light enough to be easy to move around and yet sturdy enough not to be concerned with it being flimsy or not having a long use life. It is heavy enough to stay in place while carving a larger roast, or bird. The bamboo is high quality and I choose bamboo because it is fast growing and renewable. This one fills the bill exactly! It is a high quality, bamboo board about 17" long and 1/2" thick. Perfect. I mostly use the flat side as it is easier to sweep cuttings onto a plate or dish than it is on the grooved side. However the grooved side is best for cutting meat. Have used it for several days now and it certainly resists knife marks due to its solid bamboo structure. I did add four soft rubber feet at the corners to keep the board in place while using it on the kitchen counter.
