2011 S5 Cabriolet. Can this cable be successfully routed out of the glove box and still close the box and not pinch the cable?

Not really I just close it, it pinches a little bit still works..

Will this work for 2007 Audi A4 2.0t Quattro?

Not sure. I have a 2010 A5 and it worked, although the one I received was defective. I’m waiting in the replacement but I fear the same issue will occur

Will this work with an iPhone X?

I think you’ll need the Bluetooth adaptor one, since iPhone X doesn’t have a headphone jack. I have the 6+ still and it works great :)
