you might use them in the construction of the grill, like if you're building your own yakitori grill, but I dont think you allow the food to touch or cook on the bricks

Is there any firebrick and mortar I can buy that can tolerate 3,800°F-6,000°F?

They are industrial grade firebrick these will not work for that application

Yes, they measure 9" by 4.5" by 1.25". They are identical to the original fire bricks in my Vermont Castings Defiant wood stove. My stove is 9 years old.

What is the best way to join these together?

Your best bet to join these bricks would be to use a refractory mortar, such as the Rutland Fireplace Mortar. If outdoors, you will need to use the Rutland Castable Refractory Cement.
