Mercer Culinary M23011 Millennia 11-Inch Granton Edge Slicer, Black or the more expensive Mercer Culinary Renaissance Granton Edge Slicing Knife, 11 Inch. The Chef knife should work fine but if your doing a lot of slicing get a slicer.

Is this a 7" Nakiri knife or a 18" bread knife? There's a lot of conflicting info

It's a 7" knife and it's fabulous! I intend to buy another one a little larger.

What is the thickness of the blade (at the top), in mm?

The spine is the same thickness from the handle to the top. Then it tapers to the edge. I own dozens of knives some costing me over $100 and this knife is one of my favorites. It feels and performs wonderfully.
