If a large package is placed on the scale and it covers the digital screen, how do you know the weight?

There is a fold-up portion of the scale to accommodate top-heavy packages, so you can turn the package the other way to view the screen. If it is still too large, you can use something on the scale first, like a smaller cardboard box, zero the scale out with that extra box on there, then place your package on the extra box hopefully allowing you to view the scale readout. I often just use a plastic mixing bowl from the kitchen, zero it out, and then balance my large package on the bowl.

Will this scale weigh items that are less than 5lbs?

How accurate is it to the gram or oz. doing reloading work ammo. I use a higher precision scale but just need another scale

Being as there are 7000 grains of powder in a pound and you will need to measure to 0.1 grain with accuracy accuracy of 0.001 grain, this scale is of no use for reloading. You could easily use too much or too little powder, both can destroy your gun and maybe yourself.
