I think part of the explanation for 2) and 3) is that the Fresh Gourmet pieces seem to be a bit thicker and more substantive. So maybe the French's absorb more oil because they're thinner, and then break apart into little pieces and dust because they're thinner. So I'd definitely go with these, and I'm happy I can buy this large bag on desertcart since my local grocery stores only carry the much smaller bags.
