Are them dishwasher safe?

ABSOLUTELY NOT! You shouldn't ever wash your knives in the dishwasher. The soap is VERY caustic and will eat away the blade edge ruining the knife. I just wash mine with mild dish soap, rinse thoroughly and then dry and put into my knife holder.

This is probably a silly question but... what do you use for sharpening it?

We use an Accusharp Knife sharpener and it works great.
