The best pepper stick seasoning
My hunting buddies and I have been trying to recreate the venison pepper sticks that our local smokehouse used to process for us. The owner unfortunately passed away and took his secrets with him. I tried the Legg’s OP cracked pepper seasoning for the first time this year. That’s it! That’s the recipe! I made a fifteen pound batch with venison/pork shoulder mixed 70/30 according to the instructions. I stuffed in 19mm casings. It was too cold and windy outside to fire up the smoker so I cooked the sausages in the oven on 190° until the internal temps hit 160° (About two hours). then removed them from the oven and put in an ice water bath for ten minutes to set the fat. The sticks came out perfect and were a complete taste match to Charlie’s no longer secret recipe. I just ordered more blend 210 and wont change a thing on future batches.

Old Plantation seasons are my favorite by far. Been using them for 35 years. Great flavor. Quality seasonings. Buy some.
