Dont cover the entire iron. Count to three while your dipping it in the batter. It might sizzle a little bit. Then place it in the oil, count to three then begin tapping or shaking it down carefully to get the flower of wet batter, to slide off. Make sure you have a deep pot with plenty of oil to cover the whole iron. Dont skimp. As soon as the flower comes loose count to three and get it out of there. Otherwise it browns too much and is over cooked. Even if it looks raw dont worry it will dry crisp.
