Is this smoker big enough to smoke a turkey

Yes. Just adjust/remove necessary grills that come with the unit to make room for the turkey. I use applewood for smoking turkey.

can you smoke cheese in the smoker

It may be difficult to get temperatures low enough to smoke cheese in this smoker. Please contact Smoke Hollow Customer Service at customerservice@smoke-hollow.com for helpful tips.

How can this smoker be insulated to better retain the heat?

You can install adhesive gaskets to seal in the smoke. Not much you can do do insulate it but it has fairly strong heating so unless you have very low temperatures outside I wouldn't worry much about it.
