What is the alcohol percentage by volume?

The bottle is not labeled as such but PURE vanilla extract, by definition, has to have 35% alcohol and can be as high as 80 proof, similar to rum. Typically, one is only using a Tbsp or less of course and it would be a very expensive way to try to get a buzz.

The 32 oz bottle of vanilla has a warning about being flammable and the 8 oz bottle of "gourmet pure" vanilla does not. Anyone know? Similar taste?

I only purchased the larger size. Real vanilla extract always has SOME alcohol so perhaps a warning is required (by some silly law) only for the larger size. I doubt that it’s truly very flammable.

Why doesn't this specify the % alcohol content?

It might specify it on the bottle. I’ll look in the morning. I think if I remember right it’s 35%

How long is a bottle good for once opened?

The “best-by” date goes out about 5 yrs. There’s really nothing in it to spoil; vanilla extract, water and alcohol. It doesn’t say anything about refrigeration but I do and I’ve used similar products over a period of 2 yrs or more. To me it’s all worth it to get the authentic taste.
