I have a gas stove and thought it might be a good idea to place the bowl at the back of the stove - where the heat exhausts, and of course cooked it all, then in the furnace room, then in the oven on warm. Finally I just compensated for the temperature and let it sit longer, but that is not a good solution. This folding proofing box, is. The whole thing folds flat, and I did have a little trouble with the zippers, mostly because there is not a lot to hang on to and the whole thing zips together - but once I got the hang of it, there was no trouble. The whole thing unfolds and zips into a very neat box, about 12" x 12" x 16" wide. That's plenty big for my rising bowl. There is a metal grate to keep the bowl off the bottom of the box. Once in the box, I placed the included temperature gauge next to the bowl, and turned it on. One thing I immediately noticed is that there are pre-programmed times built into the timer. If you want to have a different time, there is a "Pro" mode to set exact times, and that requires you hold down on the button until the time moves and it will do so degree by degree. But... if you over run or under run, because it just keeps counting, and you try to push the button once to change by a degree, it jumps to the next pre-programmed time. That's a bit of a pain, but I just figured if I was a degree or two within range I wouldn't fool with it. You can advance or retard by one degree b y holding down the button, but it might just run off on you, so pay attention. Its not a great way to program a timer, but it's also not a big deal. Pay attention to unfolding the box, because you will want to re-fold when done, and it folds down to a very neat package for storage. I found the box heated up quickly, held its temperature very well, and did a good job proofing my dough - and it's folded up again and in the pantry out of the way. That's about perfect. I recommend it. Review: Okay for bread proofing, probably not suitable for the other stuff - I was hoping this would be an upgrade from my current bread proofer, but I really don’t think it is. It’s quite a bit more expensive, and touts more bells and whistles, but I don’t think its basic function as a temperature controlled box is quite there. I’ve used it twice for proofing some sourdough sandwich loaves, and it definitely worked better than counter proofing. However, I found it harder to use and didn’t keep the temperature as consistent as my dedicated bread proofer. The controls, to me, seem confusing. When you plug it in, you’ll see three dashes on the display screen. You still have to push and hold the power button to turn it on. When you press the temperature +/- signs, they jump by what seem to be random degrees, and I’m assuming they are somewhat preset temperatures for the various things they advertise other than bread. For example, if I start at 70F and push it once, it jumps to 78F. You have to hold the buttons to get it to go up or down one degree at a time. Seems like a shortcut for something I don’t quite get, but I’ll give it the benefit of the doubt. The other issue I had were the instructions for the temperature gauge, which is a little coated wire inside the box. The instructions basically say it can’t touch anything, but it’s not easily pliable, so it just ends up touching the bottom of the rack or the side of the proofing container regardless of how hard I try. It comes with a stand alone little thermometer, but I can’t open the back to get to the batteries, so I guess when that dies that’ll be the end of it. It is quite large though, and the material seems quite a bit thicker than my other bread proofer. Overall, this did work for my intended purpose, which was proofing bread, but I’m only giving 4 stars because I wasn’t overly impressed with it.

Great for bread!
I picked this proofing box up specifically for bread baking and it has delivered exactly what I needed from day one. The temperature control is precise and consistent, which makes a noticeable difference in how my dough rises, no more guessing whether my kitchen is warm enough or babysitting the oven with the light on. The digital thermometer and hygrometer give you real confidence that your proofing environment is dialed in, and the results in my loaves have been noticeably more consistent since I started using it.
