I rehydrated it slightly differently from the instructions: I put it in a large bowl and pour boiling water over it, leave it for a few seconds, add cold water to the bowl, chuck the water out and squeeze it hard to get rid of any moisture out of it. And ready to use. Kikurage is extremely good for you and it has no calories. I use it as often as possible. Beautiful in any stir fry. Trust me. I’m Japanese.
