Excellent for tiramisu

I use these in many deserts because they are simply the best. My Italian cookbooks all recommend this brand specifically. I was concerned that they would be stale but not the case at all. Every single time I order these they taste very fresh. I think that is because they are wrapped inside the package as well in the case. That is nice since you may not need to use them all. There are 2 big differences with these compared to other brands. They have the perfect amount of sweetness. Most others have too much sugar and end up tasting like a sugar cookie which can overpower and sometimes ruin your dessert. Second they hold their texture and even over night do not end up mushy like other brands. They are 4 inches long and I cant recall any of my orders having broken fingers in them. These are a must if you are making tiramisu in order to avoid the mushy problem. I would advise you to look at your recipe carefully and don't assume you will need the entire package and open all the cookies because this is a big bag. You can leave the ones you do not need sealed in their plastic and use for later because they will stay fresh if you did not open them. I bought these to make Tiramisu. The recipe directs you to split the lady fingers in half lengthwise and then dunk each half in the espresso mixture. But, these lady fingers are quite hard and aren't pre-split or easily split (like others I have bought in the past). I had to just dunk the entire lady finger in the espresso mixture, which while tasty, didn't produce the desired result. So my review doesn't really reflect quality (because as they are, out of the bag, they're tasty), just that they didn't meet the need for which I had purchased them.
