I would be interested in a metric and SAE separately - do you have these?

Well, the only thing that would need changing to make a tray metric or SAE is the size label. Some of our customers use the two colors we offer to keep tools separate (black/red for metric/SAE). Others print metric or SAE labels and replace the original ones.

How well does this hold a standard combination non-ratcheting chrome Kobalt wrench set?

It holds my Craftsman set nicely. It works well in a drawer or table top application. If you plan to travel with it consider a unit with a lid or some type of hold down device.

do the wrenchs stick up above the organizer, if so about how much? I guess I'm asking what is the minimum drawer depth would this work with?

Well, this depends also on the tool. The height of the tray measured inside is 1 1/8", so tools wider than that will stick out. We find typically a total height of tray loaded with tools in the range of 1 3/4" to 1 7/8" (various sets of wrenches used from Craftsmen to cheap Chinese brands).

Do Snap-On flank drive sets fit?

Mine are just craftsmen wrenches. They truly just sit in the tray (not attached to any thing). I looked at the images of flank drive and don't see much of a difference. So i don't see why the wouldn't.
